Low Fat Belgian Waffles & Kick Ass Fruit

Yes, I know the title is a little...spunky..but I'm hyper so there. So we had a great weekend. We went to the Concord Vegan Kitchen in New Hampshire on Saturday. Yours truly participated on the panel and the topic discussion was "Passionate About Vegan Cuisine". Who me? I made some Potato-Carrot Soup, and I was told it rocked. No leftovers to bring home! I really should have taken a photo, but I forgot. I will take another one with the leftovers from the second pot, and post the recipe this week; since it was my own creation. Anyway, on to the waffles! I actually made these last weekend, but I ran out of time to post. I don't remember where I got this waffle recipe, probably vegweb.com; but I can't be sure. To make them healthier, I replaced the oil with applesauce. They were really good, especially with some "sausage" links on the side. Yum. And I found some beautiful strawberries & blueberries to top it all off too! Double yum. Give them a try, and have a great week everyone!



Low-Fat Belgian Waffles with Kick Ass Fruit

1 c all-purpose flour
2 tsp baking powder
1/4 tsp salt
1 c non-dairy milk (I use rice)
1/2 applesauce OR canola oil OR half and half (I've had great results with them all)

Mix the dry ingredients, then add the milk & applesauce. Don't over mix, a few lumps are just fine. Cook in your waffle maker according to the manufacturer instructions. Once cooked, top off with the fruit of your choice and a little drizzle of maple syrup..mmmmmm...

If those waffles kick only half as much ass as that yummy Potato-Carrot soup did, they'd still be awesome! That stuff was sooo good.

Thank you for giving me a reason to resurrect my poor lonely waffle maker which has been in storage since I went vegan. I'm so excited to be able to have waffles again!! - Steve
